Seasonal Stir-Fry Soup and MORE!

Here is a picture of when I made the soup using different veggies. There are a lot of choices for this soup. You can use asparagus, green beens, squash, broccoli, snap peas, bean sprouts, etc.

Having concocted this soup many times now I realized that I have never really measured it out.  Since my family has liked it so much I at last finally figured out what the recipe was so it could be repeated!  Feel free to print it out and add it to your collection.  If you like this wholesome soup recipe, check out the document below containing links to our other soup recipes and click “Like” below.  I love soup season!  Enjoy!

In a large soup pot saute:

4-5 cups chopped green cabbage
1 red and 1 green bell pepper, diced
1 large onion, chopped
3-4 cloves garlic, chopped or crushed
4-5 ribs celery, sliced
8 oz. mushrooms, sliced
3 carrots, peeled and diced

After a few minutes add 1/2 cup water and cover with a lid.  Simmer on low while preparing the rest of the ingredients.

In a large pot of water boil 2 boxes Annie Chun’s brown rice pasta as per directed on the box.

In a measuring bowl mix together:

5 c. water3 T. Miso Master, red miso
6 T. Nama Shoyu
1/3 cup nutritional yeast
1/2 t. garlic
1/2 t. ginger
1/2 t. corriander
2 T chives
1 T. honey

Any brown rice noodle would probably work but this is my favorite for oriental type dishes.

After stirring to dissolve miso, add to pot of vegetable and warm.

When noodles are finished cooking rinse in cool water, drain well, and add to pot.

To the pot of soup add sesame seeds to your liking (1-4 T.) and salt and pepper to taste.

Serve warm.  My kids love it when I buy disposable chop sticks to eat the noodles with, then they get to slurp their broth at the end.

Seasonal Stir-Fry Soup is absolutely tasty this time of year… but then again, all soups are going to be tasty as the weather cools.  Soups are also filled with all kinds of nutritional goodness which helps to boost the immune system.

Before Traci taught me how to make soup I was a lost cause!  I was a canned soup girl and didn’t know how to make it any other way.  In fact, if we were having soup for dinner my husband would be fine if it came from a can.  If I made the soup he didn’t want anything to do with it.  (And for good reason.  My soups had no flavor.  Traci taught me all about seasoning and how to combine vegetables to make terrific soup every time!)

Now my dear hubby is constantly surprised at how much he likes my soup.  Perhaps it is in my favor that he is expecting the worst.  His low expectations makes him even more surprised when the soup turns out delicious!  He likes it so much he raves over it.  I’m glad he was honest with me in the early days of marriage because now when he tells me he loves it I know it is the truth- and I like to hear his praise all the more!  Making soup has become a delightful time in the kitchen and I enjoy sharing that with you =)
