This is a fantastically fun and fast breakfast salad. We’ve been having a lot of smoothies for breakfast and this salad helps to break up the menu and keep things fresh and new. I like to make it the day after I do my shopping so that everything is fresh.
Of course, any fruit can be used, though we really like this combination.
To a large bowl add:
– Fresh, cleaned and cut strawberries
– Blueberries
– Kiwi
– Mandarine oranges
– bananas – Optional: Chopped Pecans or shredded coconut
In a separate bowl mix together:
1 can coconut cream and about 1/4 cup raw agave and 1/2 tsp. pure vanilla
Gently mix the cream sauce over the fruit, dish up and serve immediately.
