This is it!!!
I loved the dressing so much I had to write it down before I forgot how I made it so I could share it with you!!!
Begin with your favorite salad greens. Organic baby spinach goes especially well with this salad!
Add fresh blueberries, fresh pomegranate seeds, and walnut topping (recipe to follow).
For those who love dairy you can add a few crumbles of natural feta cheese. My husband especially appreciated it. Just crumble them on top- you don’t need to use as much when it is mostly for looks… adding the cheese is a gesture of love and goes a long way in scoring points with hubby or others who may not be fully on board with more natural cooking.
Drizzle salad with dressing.
Serve with delight!

I made the fresh pomegranate juice by putting the seeds of the pomegranate through my Omega juicer. alternately you could blend them in your high powered blender and strain out any pith/remaining seeds. I feel the Omega juicer made for a better juice but either way should work. I do not know if a store bought pomegranate juice would work but you could always try. (I’d just make sure that the juice didn’t contain any preservatives or artificial ingredients; that would be a fast way to ruin a healthy salad!)
Creamy Pomegranate Vinaigrette 
1/2 cup almondaise (videos 1,2 and 3: how to make it)
(Veganaise could be used in a pinch.)
1/4 cup fresh pomegranate juice
3 T. raw agave
2 t. apple cider vinegar
dash of freshly ground salt and pepper
Optional: add 2 t. poppy seeds to make it a Pomegranate Poppyseed dressing! YUM!
Sweet and Savory Walnut Salad Topping
Chop 3/4 cup walnuts into a small bowl. Add a good sprinkle of sucanat (organic brown sugar), and a dash of sea salt, cinnamon, and nutmeg.
Add this mixture to a very warm frying pan with 2 T extra virgin olive oil or coconut oil.
Add 2 T. honey.
Stir topping as it warms and melts together. Usually this takes just a few minutes. Sprinkle warm over salad.
