Grandma Charlie’s Ginger Molasses Cookies

Rolling the dough in sugar is what makes the top of the cookie crack during baking.

2/3 c. olive oil/lite olive oil

1 c. organic sugar
1-2 T water.
1/4 c. blackstrap molasses

2 c. whole wheat flour (I like to use sprouted whole wheat flour)
1 T ground flax seed
2 tsp soda
1/4 tsp salt
1 t. cinnamon
1 tsp. ginger

1/4 c. organic sugar for dipping

Mix oil and sugar thoroughly.  Add the 1 – 2 T. water and molasses and mix well.

Sift dry ingredients together and add to the wet mixture.

Form cookie dough into a small ball and roll into the sugar. Place onto a lightly greased cookie sheet.

Bake 350* for 7-8 minutes (be careful not to over bake) just until tops begin to crack.

I was planning to get an after shot of the cookie… but they were eaten in record time… maybe next time!  =)Linda
