When reaching into the cupboard for some sprinkles, I accidentally knocked a package of sucker sticks out into the cookie batter. All my children wanted to know what I was making with sprinkles AND sucker sticks. I thought for a moment and remembering a video Linda sent me, thought, let’s make cookie pops!
1/2 cup Spectrum Organic Shortening (now in butter flavor!)
1 cup evaporated cane juice crystals (organic sugar)
4 T flax egg
1 tsp vanilla
1/2 tsp sea salt
1 tsp baking powder
1/4 tsp cream of tartar
1 2/3 (plus 2 TBSP) cup sprouted wheat flour
1. Preheat oven to 350. Line baking sheet with parchment paper.
2. Whip together shortening and crystals. Beat in flax egg and vanilla and whip until fluffy.
3. In a small bowl mix together soda, powder, salt, cream of tartar and 1 2/3 cup flour. Add a third at a time to wet ingredients, beating well after each addition. Add additional flour 1 TBSP at a time until dough is stiff but not crumbly. (If you accidentally get it crumbly add a bit of flax egg to moisten)
4. Drop by well rounded tablespoon (I used a cookie scoop) onto cookie sheet, alternating number of cookies in each row so the cookies are off-set. Flatten each ball with the bottom of a glass until balls are 1/2 inch thick.
5. Sprinkle with Carnival Organic Sprinkles. Insert sucker sticks into center side of cookie until they are embeded 1 inch.
6. Bake 8 minutes. Cool completely before removing from tray, or sticks will not hold.
