Creamy Millet Salad- SUPER EASY!!! SUPER TASTEY!!!

Dear Friends,  it is so good to have you with us today!

I am so excited to share what Traci has provided us with— a fast and yummy salad recipe… I can’t wait to show you how easy it is so you can try it on your own.

Using the same grain for three different meals in one week streamlines the meal planning process to the point that it is easy and affordable. Check out Traci’s post here about how she plans a week’s worth of meals. This is one way we can easily learn to conveniently transition to healthier eating.

I love this salad for summer picnics, and since the season will soon be upon us (we are all really hoping!) I wanted you to have this fun recipe in your repertoire.  At a class I recently taught how to make this salad and the ladies, coming from the Standard American Diet, were thrilled that it reminded them of a chicken salad sandwich (minus the chicken but just as yummy and flavorful!)  We agreed that it was the seasoning that made it so tasty.  I love to use Traci’s Seasoning Powder (I like convenient and delish – So this works great for us!)

Once again, the ingredients in this recipe contains most of what you need from your food storage and your garden or local grocer/farmer’s market, making it a tried and true recipe for using and rotating what we keep on hand!  Depending on your family’s size and how often you use millet will depend on how much you want to buy.  I bought about 10 pounds when I started and because I wasn’t familiar with how to use it, we had it around for quite a while and was glad when, after two years, we were finally able to get some fresh millet.  So if you are not used to using it, start out small and work your way into it.  After you see how well your family likes it you can check into buying it in bulk which saves on the family budget!  Good luck!

Here is to hoping that summer will soon shine its brilliant rays upon us so that we may enjoy this tasty salad at our next summer outing!

To you and yours, in abundance and health,
Linda
